Step 1: Make Cheesecake Filling
- In a bowl, mix cream cheese, sugar, and vanilla extract until smooth. Scoop small 1 tsp portions onto a tray and freeze for 30 minutes.

Step 2: Prepare Cookie Dough
- In a bowl, whisk flour, baking soda, and salt.In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.Gradually add dry ingredients and mix until just combined.

Step 3: Assemble Cookies
- Scoop 2 tbsp of dough and flatten slightly. Place frozen cheesecake filling in the center. Cover with more dough and seal edges tightly. Roll into balls.

Step 4: Chill Dough
- Refrigerate stuffed cookie dough balls for 30–45 minutes.

Step 5: Coat in Cinnamon Sugar
- Mix sugar and cinnamon. Roll each chilled dough ball in the mixture.

Step 6: Bake
- Preheat oven to 350°F (175°C). Place cookies on a lined baking tray and bake for 12–15 minutes until edges are golden and centers are slightly soft.Cool for 10 minutes before serving.
