Ingredients
  

Chicken:
  • 4 bone-in skin-on chicken thighs
  • 1 tsp kosher salt
  • ½ tsp black pepper
Greek Marinade:
  • 3 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 4 garlic cloves minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
Optional Vegetables:
  • 1 small onion sliced
  • 1 bell pepper sliced
  • 1 cup baby potatoes halved

Method
 

Step 1 - Prepare Marinade
  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

  1. Coat chicken thoroughly with marinade. Cover and refrigerate for at least 1 hour (overnight for best flavor).
Step 3 - Preheat Oven
  1. Preheat oven to 425°F (218°C).
Step 4 - Arrange Chicken
  1. Place chicken on a baking tray. Add vegetables around it if using.
Step 5 - Roast Chicken
  1. Roast for 35–45 minutes until internal temperature reaches 165°F (74°C).

  1. Broil for 3–5 minutes to crisp up the skin.
