Garlic Soup Recipe: A Comforting Classic Packed With Flavor and Health Benefits

Ingredients
  

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion finely chopped
  • 20 –25 garlic cloves peeled (about 2 heads)
  • 4 cups low-sodium vegetable broth or chicken broth
  • 1 cup water
  • 1 bay leaf
  • ¾ teaspoon salt adjust to taste
  • ½ teaspoon freshly ground black pepper
  • Fresh parsley or thyme optional, for garnish

Method
 

  1. Step 1: Sauté the Aromatics
  2. Heat olive oil and butter in a large pot over medium heat. Add chopped onion and cook for 5- 6 minutes until soft and translucent.
  3. Step 2: Add the Garlic
  4. Add whole garlic cloves. Stir gently and cook for 3–4 minutes. The garlic should soften without browning.
  5. Step 3: Build the Soup Base
  6. Pour in broth and water. Add bay leaf, salt, and pepper. Bring to a gentle boil, then reduce the heat.
  7. Step 4: Simmer Slowly
  8. Cover and simmer for 25 - 30 minutes, until the garlic becomes very tender.
  9. Step 5: Blend (Optional)
  10. Remove the bay leaf. Blend with an immersion blender until smooth, or leave slightly chunky if preferred.
  11. Step 6: Adjust Seasoning
  12. Taste and adjust salt and pepper. Garnish with fresh herbs if desired. Serve warm.

Notes

  • Use low-sodium broth to control salt levels.
  • For extra richness, add a splash of cream or milk at the end.
  • Roasting the garlic first creates a sweeter, milder flavour.
  • Store leftovers in an airtight container for up to 3 days in the refrigerator.
