Step 1 – Prepare the Cookie Dough
- In a bowl, whisk together the flour, baking powder, and salt. In another bowl, cream the softened butter and sugar until smooth. Add the egg and vanilla extract, mixing until fully combined. Gradually add the dry ingredients and mix until a soft dough forms.

Step 2 – Preheat the Oven
- Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.

Step 3 – Shape the Cookies
- Scoop small portions of dough and flatten them into circles about 2½ inches wide. Keep the cookies evenly spaced on the baking sheet.

Step 4 – Bake the Cookies
- Bake the cookies for 8–10 minutes, until the edges turn lightly golden. Remove them from the oven and allow them to cool completely before assembling.

Step 5 – Prepare the Ice Cream Filling
- Place the slightly softened vanilla ice cream in a bowl and gently fold in the rainbow sprinkles until evenly mixed.

Step 6 – Assemble the Sandwiches
- Place a scoop of ice cream onto the flat side of one cookie. Top with another cookie and gently press together to form a sandwich.

Step 7 – Freeze the Sandwiches
- Place the assembled sandwiches on a tray lined with parchment paper and freeze for 1–2 hours until firm.

Step 8 – Serve
- Serve immediately or wrap individually and store in the freezer for later.

Notes
• Allow cookies to cool completely before adding ice cream to prevent melting.
• Do not overbake the cookies; slightly soft cookies make better sandwiches.
• Let the ice cream soften for 5–7 minutes so it spreads easily.
• Freeze the sandwiches after assembling so they hold their shape when served. Recipe Tips Make Ahead:
You can prepare the sandwiches up to 2 weeks in advance and freeze them. Storage:
Wrap each sandwich in parchment paper and store in an airtight container in the freezer.
